Spring Salad Pizza Pie

There’s this restaurant down the street from my house and they make the best white sauce pizza with a fresh salad on top. I love this combination because you get the freshness from the salad with the crunchy cheesiness from the pizza. This recipe is filled with seasonal spring ingredients and is made with a gluten-free cauliflower crust.

I don’t always eat gluten-free but I do love coming up with creative healthier twists on recipes. Therefore, I decided to make this pizza with a cauliflower crust. It’s mixed together with mozzarella cheese, parmesan, Italian seasonings, garlic and it binds together with coconut flour and eggs. Such a great way to fit in an extra veggie.

Ingredients

  • 1 head cauliflower
  • 1 egg
  • 1/4 cup coconut flour
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 3/4 cup mozzarella cheese
  • 1/2 cup parmesan
  • salt + pepper
  • 5-6 thick slices mozzarella
  • 1 1/2 cups ricotta cheese
  • 1/2 tsp chili flakes
  • 1 tbsp honey
  • 1 head Bibb lettuce leaves
  • 1/2 cup thinly sliced radishes
  • 2 tbsp olive oil
  • 1/3 cup roasted almonds
  • 1/2 lemon *juiced*
  • salt + pepper *to taste*
  • topping: finely grated ricotta cheese

Directions

  1. Bring the water in a large pot or steamer to a boil. Chop your cauliflower into small florets and then add to the steamer. Steam until you are able to poke a fork through the cauliflower. 
  2. Once cooked add the cauliflower to some cheesecloth and strain out all the additional water.
  3. Preheat the oven to 425 F. Add the cauliflower, egg, coconut flour, mozzarella cheese, parmesan, oregano, garlic powder and sea salt and pepper to a large mixing bowl. Combine all ingredients with your hands.
  4. Line a baking sheet with parchment paper. Take the dough and form a circular pizza shape (about 9-10in inches in diameter). Bake for 20 minutes.
  5. Remove the crust from the oven and spread on the ricotta (or cottage) cheese, top with the fresh mozzarella slices, and chili flakes. Bake for another 10 minutes.
  6. While the pizza finishes baking make the butter lettuce salad. Toss together the lettuce, radishes, roasted almonds with lemon juice and olive oil. Season with salt and pepper.
  7. Let the pizza cool slightly and drizzle with honey, then top with the salad and garnish with freshly grated ricotta salata cheese.
