Winter Kale Salad with Gouda, Walnuts & Radishes

This has been one of my favorite salads lately. It’s simple, colorful and is the best combination of flavor and textures.

Winter Kale Salad

  • 6 cups torn kale leaves *packed*
  • 1/4 cup olive oil
  • 1 lemon *juiced*
  • 1 cup sliced radishes
  • 1/2 cup shaved sheep’s gouda
  • 1 cup walnuts
  • 1/4 cup honey
  • 1 tbsp olive oil
  • 2 tbsp sesame seeds

Directions

  1. Set your oven to 350 degrees. Toss your walnuts with olive oil, honey, sesame seeds, sea salt and pepper. Roast for 6-8 minutes.
  2. Massage the kale leaves in a bowl with olive oil and lemon juice. Season with salt and pepper.
  3. Top with sliced radishes, shaved gouda cheese, and honeyed walnuts.
